TORTILLA DE PATADA FROM SPAIN 
2 onions, chopped
2 tbsp. butter
3 to 4 potatoes, boiled
Ham, optional
Garlic salt
6 to 8 eggs, beaten

Melt butter in large fry pan. Add onion and saute. Add potatoes, preboiled, sliced. Add ham, sliced, if desired. Garlic salt to taste. Stir and cook for 2 minutes. Add eggs and stir quickly. Let set covered for 2 minutes or until eggs on top are done. Remove to serving dish. Great hot or cold. Good for office breakfasts.
