POTATO PUFF BALLS | |
2 c. mashed potatoes 2 eggs, separated 1 tbsp. minced parsley 1/2 tsp. instant minced onion 1/2 tsp. salt Melted butter Preheat oven at 375 degrees. Blend potatoes, egg yolks, parsley, onion and salt. Beat egg whites until stiff peaks form. Fold into potato mixture. Spoon into well greased muffin cups. Brush with melted butter. Bake at 375 degrees for 30 to 35 minutes, until golden brown. 6 servings. |
