EASY TAMALE PIE 
2 tbsp. oil
1 lb. ground beef
2 c. tomato juice
1 c. Masa Harina flour
1 1/2 tbsp. chili powder
1/2 lb. sliced Monterey Jack cheese
1 onion, chopped
2 c. corn
1 c. milk
1 1/2 tsp. salt
1/2 c. ripe chopped olives

Heat oil and cook onions until soft. Add beef and cook until brown; drain fat. Stir in rest of ingredients except olives and cheese; mix well and add olives. Cover pie with cheese; cover and cook on top of the stove over low heat 20-25 minutes until cheese is melted. Serves 6-8.
