DEB'S GREEN CHILI STEW | |
This is great for a head cold! 1 lb. ground beef (chuck) 1/2 cup chopped onions 1 clove chopped garlic 2 cups chopped raw red potatoes 1 1/2 cups chopped green chilies (depending on heat desired) 1 (15 oz.) can diced tomatoes or 1 (10 oz.) can Rotel tomatoes with green chilies (depends on heat desired) 1 (15 oz.) can chicken broth plus 3 cans water (use empty broth can) salt and pepper, to taste Sauté ground beef, onions and garlic. When finished add to a large stock pot. Add all remaining ingredients. Simmer on low for one hour, stirring occasionally. Serve with fresh tortillas. Note: Adjust the amount green chilies according to chili heat desired, sometimes a little is a lot. Submitted by: Deb - Cimarron Valley Ranch |
