TRULY OREGON CAKE 
2 1/2 c. cake flour
1 1/2 c. sugar
3 1/2 tsp. baking powder
1 tsp. salt
1/2 c. shortening
1/4 c. maraschino juice
3/4 c. milk
1 tsp. vanilla
2 tsp. almond extract
4 egg whites, unbeaten
18 maraschino cherries, chopped and drained
1/2 c. walnuts, chopped

Sift flour, sugar, baking powder and salt into mixing bowl. Add shortening. Combine milk, maraschino juice and flavorings. add 3/4 cup of this liquid to dry ingredients. Beat on medium speed of mixer for two (2) minutes. Add remaining liquid and egg whites. Beat on medium speed for two (2) more minutes. Add cherries and nuts and blend well. Bake in moderate oven (350 degrees) for thirty (30) minutes. Makes two 8 inch layer pans.

CHERRY FROSTING:

1/2 c. vegetable shortening
1/4 c. egg whites, unbeaten
1 tbsp. glycerin
1 lb. powdered sugar
1 1/2 tbsp. maraschino cherry juice
