TOMATO AND ONIONS 
6 med. tomatoes
1 thinly sliced med. onion
1/4 c. chopped parsley
1 c. salad oil
1/3 c. white vinegar
1 tbsp. basil leaves
2 tsp. sugar
1 tsp. salt
1/2 tsp. powdered mustard
1/2 tsp. powdered garlic
1/2 tsp. coarse ground black pepper

Hold tomatoes at room temperature until fully ripe. Remove stems from tomatoes; cut each tomato into 1/4 inch thick slices. Prepare marinade by combining oil, vinegar, basil, sugar, salt, mustard, garlic, and black pepper; mix well. In a serving bowl arrange a layer of tomatoes. Scatter onions and parsley lightly over tomatoes. Sprinkle lightly with marinade. Repeat. Cover and let stand at room temperature for 1 hour before serving.
