TOMATO AND ONION VINAIGRETTE 
2 lg. ripe tomatoes, sliced
1 red onion, peeled and sliced thin
1 tbsp. chopped parsley
1 tsp. dried sweet basil
1 clove garlic, minced
5 tbsp. salad oil
2 tbsp. red wine vinegar
Dash of salt and pepper
2 sm. heads Bibb lettuce, washed and dried

Separate onion slices into rings and arrange on top of tomato slices. Blend rest in ingredients together in blender. Pour over onions and tomatoes and chill until serving time.

To serve, arrange lettuce leaves on individual salad plates. Pile salad on top and drizzle dressing over all.
