YEAST SOPAPILLAS 
4 cups flour
1 1/2 tsp. salt
1 tbsp. sugar
1 tsp. baking powder
1 tbsp. shortening
1 pkg. dry yeast
1/4 cup warm water (110°F)
1 1/4 cups scalded milk, cooled
Oil for frying

Place dry ingredients in large bowl and cut in shortening. Dissolve yeast in warm water; add sugar and stir well. Add liquid to dry ingredients. Mix to form a workable dough.

Knead dough 5-10 minutes. Set aside.

Cover dough and let rest for 15 minutes. Heat oil in a deep skillet, 420°F. Roll dough until 1/8 inch thick and into a rectangle; cut into 4 inch squares or rectangles.

Deep fry each piece until golden brown. Drain on paper towels.

Serve warm with honey.

Makes 3-4 dozen. Can be warmed in microwave to eat later.

Since microwave ovens vary in power, you may need to adjust your cooking time.
