SOPAPILLAS WITH HONEY 
1 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. granulated sugar
1 tbsp. solid vegetable shortening
1/3 c. warm water
Vegetable oil for frying
Honey or confectioners' sugar

In small bowl stir flour with baking powder, salt and sugar. Add vegetable shortening and cut in with 2 knives. Add water and stir with fork to make stiff dough.

Turn out dough onto floured surface and knead 5 minutes. Put dough back into bowl cover and let stand 30 minutes. Pour oil (3 inches) in deep heavy saucepan; heat to 375 degrees. Roll out dough to 18 x 6 inch rectangle. Cut into 2 x 3 inch rectangles. Slide several dough rectangles into oil and fry 1 minute on each side or until golden and puffed. Drain.
