SOPAPILLAS 
1 pkg. active dry yeast
1 1/4 c. warm water
1 tsp. sugar
1 tsp. salt
1 tbsp. melted butter
1 beaten egg
3 c. flour
Vegetable oil for frying
Honey

Dissolve yeast in warm water. Add sugar, salt, butter, and egg. Stir in flour until a soft dough is formed.

On lightly floured board, knead dough for several minutes, and let rise in a warm place until doubled in size--about 1/2 hour. Roll out dough to 1/4 inch thick. Cut into 2 inch squares.

Fry in preheated hot oil until brown. Drain and serve with honey while warm.
