SCALLOPED TOMATOES WITH ONIONS 
2 c. very thinly sliced onions (Vadalia are best, when in season)
4 tbsp. butter
1 tbsp. sugar
1 tsp. salt
2 1/2 c. canned tomatoes, drained
1/2 c. soft bread crumbs
Buttered bread crumbs
Pepper, lg. pinch

Peel and slice onions. Melt butter in saucepan, stir in onions. Sprinkle with sugar and salt, cover. Cook gently over low heat 15 minutes, shaking pan frequently. DO NOT BROWN. Arrange onions in shallow, wide baking dish.

Add drained tomatoes mixed with bread crumbs. Mix well with onions. Season with pepper. Generously cover with buttered crumbs.

Bake, uncovered, at 350 degrees for 30 to 45 minutes or until browned. Buttered bread crumbs: melt 2 tablespoons butter, pour over crumbs and toss.
