ZUCCHINI WITH TOMATOES AND
ONIONS
 
3 lb. zucchini, cut into 1/4 inch slices (about 8 med.)
3 med. onions, sliced (about 1 1/2 c.)
1 clove garlic, sliced
1/3 c. salad oil
1 (1 lb. 12 oz.) can tomatoes (about 3 1/3 c.)
2 tsp. salt
1/8 tsp. pepper
2 tsp. oregano
1 tbsp. wine vinegar
3 tbsp. grated Parmesan cheese

Arrange zucchini slies in a greased 3 quart baking dish. Saute onions and garlic in oil until lightly browned and tender. Add tomatoes, seasonings, and vinegar. Heat to boiling and simmer 1 minute. Pour tomato/onion mixture over zucchini slices in baking dish. Top with grated cheese. Bake at 400 degrees for about an hour, or until zucchini are tender. Makes 8-10 servings.
