ZUCCHINI COOKIES 
1 c. shredded unpeeled zucchini
1/4 c. butter
2 egg whites
1/2 c. sugar
2 c. flour
1 1/2 tsp. cinnamon
3/4 tsp. cloves
1 tsp. baking soda
1 c. nuts
1 c. raisins
Few sunflower seeds

Combine zucchini, butter, eggs and sugar. Add remaining ingredients and mix well. Chill dough at least 2 hours. Drop by teaspoons onto greased cookie sheets. Bake at 325 degrees approximately 12 minutes.
