SUGARLESS COOKIES 
1 c. raisins
1/2 c. chopped dates
1/2 c. chopped apples
1 c. water
1/2 c. shortening or 1/4 c. oil
2 eggs, beaten
1 tsp. vanilla
1 tsp. baking soda
1 c. flour
1/2 c. chopped nuts (roasted sunflower seeds are good)

Boil raisins, dates, and apples in water for 3 minutes. Add shortening or oil, then cool. Add beaten eggs, vanilla, soda, flour, and nuts. Mix well and refrigerate until chilled. Drop by teaspoon onto a well greased cookie sheet. Bake 10-12 minutes at 350 degrees. Refrigerate in airtight container.
