QUICK BATTER BREAD 
1 egg
3/4 c. white corn meal
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 c. buttermilk

Heat oven to 400 degrees (moderate hot). Beat egg. Stir in remaining ingredients. Pour into hot 1-quart baking dish with 1 tablespoon butter melted in it. Bake 20-25 minutes or just until set. Serve hot with butter or gravy. Yield: 6 servings.
