WHOLE GRAIN BATTER BREAD | |
1 1/2 c. boiling water 1/2 c. butter 1/3 c. sugar 2 tsp. salt 2 pkgs. dry yeast 1 c. warm water 5 1/2 to 6 c. flour 2 eggs 1 c. nuts, chopped 2 c. Quaker oats, quick or reg., uncooked Combine boiling water, butter, sugar, salt, in large bowl, stirring until butter melts. Cool to lukewarm. Dissolve yeast in warm water. Stir dissolved yeast, oats, 2 cups of flour, eggs and nuts into lukewarm mixture. Mix well. Stir in enough remaining flour to make a stiff batter. Place in large, greased bowl. Cover and let rise in a warm place 1 1/2 hours or until doubled. Spoon into 2 well-greased loaf pans. Let rise uncovered in warm place 30 to 45 minutes or until nearly doubled. Bake at 375 degrees for 30 to 35 minutes or until golden. Remove from pans. Cool one hour. Freezes well. |
