SWEET POTATO CASSEROLE 
2 cups mashed cooked sweet potatoes
2 eggs, beaten
1/2 cup sugar
1/2 teaspoon salt
1/2 stick butter, melted
1/2 cup milk
1 1/2 teaspoons vanilla

Toppings:

1/2 cup brown sugar
1/3 cup flour
1 cup chopped nuts (I use pecans)
1/3 stick butter, melted

Mix sweet potatoes, eggs, sugar, salt, butter, milk and vanilla in 1 1/2 quart casserole. Mix brown sugar, flour, nuts and butter for topping.

Bake at 350°F for 35 minutes. Freezes well. Reheat to serve.
