BLUEBERRY CHEDDAR MUFFINS 
2 c. biscuit mix
1 c. sharp cheddar cheese, shredded
1 egg, well beaten
1/4 c. milk
1/4 c. sugar
2 c. fresh or frozen blueberries, rinsed and drained

Mix biscuit mix with cheese and sugar. Beat egg with milk and add liquid all at once to dry ingredients, stirring until blended. Fold in berries carefully. Put mixture into 12 paper lined muffin tin cups. Bake at 400 degrees for 15 to 20 minutes or until golden brown. Serve warm.
