DAIQUIRI BALLS (NO BAKE) 
1 c. semi sweet chocolate pieces
1/2 c. sour cream
1/2 lb. vanilla wafers
Confectioners' sugar
1/4 tsp. salt
3 tbsp. cocoa
1 tbsp. each of grated lemon & orange rind
2 1/2 tbsp. lemon juice
1 1/2 tbsp. maple syrup
1/4 c. rum
1 c. finely chopped pecans

Melt chocolate over hot water or in microwave and cool. Add cream and refrigerate overnight. Form into 54 balls, using 1/2 teaspoon of mixture for each, these will be the centers.

Crush wafers, add 1 cup sugar, the salt, cocoa and fruit rinds. Blend in lemon juice, syrup, rum and pecans. Form balls the size of walnuts around the chocolate centers. Roll in confectioners' sugar. Store air tight. Can be frozen.

Since microwave ovens vary in power, you may need to adjust your cooking time.
