NORWEGIAN PRUNE PUDDING 
1 c. dried prunes
1 3/4 c. water
1 c. sugar
3 tbsp. cornstarch
1/2 tsp. cinnamon
1/8 tsp. salt
1 1/4 c. water
3 tbsp. butter
3 tbsp. lemon juice

Pour 1 3/4 cups water over prunes. Cover and cook until soft. Cool and drain, reserving prune liquid. Chop prunes and add to liquid.

Combine sugar, cornstarch, cinnamon and salt in saucepan. Gradually add 1 1/4 cups water and prune mixture. Bring to boil, stirring constantly. Simmer uncovered 15 minutes. Add butter and lemon juice. Pour into serving dishes. Chill. Serve with whipped topping or cream. Serves 6.
