APPLE PRUNE DOWDY | |
12 oz. (about 2 c.) pitted prunes, halved 2 c. sliced apples 1 c. orange juice 1/4 c. packed brown sugar 1/2 tsp. cinnamon 1/4 c. butter, softened 1/4 c. sugar 1 egg 3/4 c. flour 1 tsp. baking powder 1 tsp. grated orange peel 1/4 tsp. salt 1/3 c. milk In a 1 1/2 quart shallow baking dish, layer prunes and apples; pour juice over and sprinkle with brown sugar and cinnamon. Cover and bake in a 350 degree oven about 30 minutes, until apples are tender. In mixing bowl cream butter and sugar until fluffy. Beat in egg, flour, baking powder, peel and salt. Stir in milk to blend thoroughly. Spread evenly over fruit and continue to bake, uncovered about 30 minutes until top is lightly browned. If desired, before serving break up top and top with Cool Whip or ice cream. 6 to 8 servings. |
