ZUCCHINI CASSEROLE 
Layer One:

1 c. breadcrumbs for stuffing
1 c. water (boil)
1/2 stick butter

Mix and put in a greased casserole.

Layer Two:

8 c. zucchini (blanch)
1/4 c. chopped onion
1 c. shredded carrots

1 can cream of chicken soup
1 c. sour cream

Mix soup and sour cream and stir in vegetables. Spread over stuffing. Sprinkle dry stuffing on top of casserole.

Bake at 350 degrees for 40 minutes in a 9 x 12 dish.
