KOSER DILL PICKLES 
Add to each quart:

1 piece of celery
2 garlic cloves
Head of 1 dill
Piece of hot pepper or 1/8 tsp. hot red pepper
1 tbsp. salt
1 tsp. vinegar
1/2 tsp. whole mixed pickle spice

Put a grape leaf, cabbage leaf or celery leaves on top of jar. Pack clean fresh cucumbers in a quart jar. Fill with cold water from top. Seal. Will take 7 to 10 days for seal to take hold as it will ferment. Can use green tomatoes in place of cucumbers.
