JULIE'S CHEEZ-IT CHICKEN 
Cast iron skillets are the best for this. Hot 'n Spicy Cheez-Its works fantastically.

4-8 boneless chicken breasts, patted dry
1 cup Cheez-It brand crackers (any flavor), crushed to a fine powder
1/3 (16 oz.) bottle lite Ranch dressing (I use Ken's)
1 cup all-purpose flour
2 tbsp. salt
adobo seasoning (Badia)
barbecue seasoning (Grill Mates)
2 large eggs
canola oil, for frying

Heat a skillet or pan to medium heat on stove-top. Add canola oil to create a 1/2-inch of oil within the pan. Pat chicken breast dry with a paper towel.

Arrange three bowls or breading trays: One with flour and salt mixture, one with finely crushed Cheez-Its seasoned well with adobo and barbecue seasonings, and one with two eggs whipped with a fork until well "scrambled and fluffy".

Add about 1/3 of the bottle of Ranch Dressing to the egg bowl and combine thoroughly.

Dip each chicken breast into the flour first and coat with a thin layer of flour/salt mixture. Then dip each breast in the egg/ranch mixture... then the Cheez-It/barbecue/adobo mixture.

Once the chicken is breaded, place in heated oil pan and cook for 3 to 4 minutes before flipping and resuming for another 3 to 4 minutes per side.

Tips: Not too much oil so the chicken isn't completely submerged. Honestly this recipe works well with any flavorful cracker snack. Enjoy!
