MANDARIN ORANGE LETTUCE SALAD 
Lettuce
1 can (16 oz.) mandarin oranges
1/2 c. slivered almonds
2 cooked chicken breasts, cut up
4 tbsp. sugar

Put sugar and almonds in saucepan, medium heat. When sugar starts to melt stir CONSTANTLY until all of the sugar is melted and all of the almonds are coated, spread out on piece of aluminum foil. Crunch up when hard and put in with lettuce, chicken and oranges.

DRESSING:

1/2 c. oil
1 tsp. salt
4 tbsp. tarragon vinegar
4 tbsp. sugar

Mix ingredients and let stand at room temperature for 2 hours, stir occasionally.

Put on salad right before you eat - not before (goes soggy otherwise).
