SZECHUAN NOODLES WITH PEANUT
SAUCE
 
12 oz. spaghetti, linguine or similar pasta

SAUCE:

1/3 c. hot water
1/3 c. smooth peanut butter
2 tsp. reduced sodium soy sauce
2 tsp. vinegar (white wine or rice)
2 scallions, finely chopped
2 cloves garlic, very finely minced
1 tsp. sugar
1/2 - 1 tbsp. hot red pepper flakes

Cook pasta until al dente (chewy). Drain and set aside. Keep warm. Prepare sauce in order given. Combine sauce and pasta in a heated serving bowl. Makes 4 servings.
