SALMON LOAF 
1 (1 lb.) can of salmon or one (12 1/2 oz.) can of skinless, boneless salmon
1 egg, well beaten
1 tbsp. minced parsley
2 tbsp. finely minced onions, fresh
1/2 to 3/4 tsp. salt, or to taste
Dash of hot sauce or a few grains of cayenne pepper
2 tbsp. melted butter
2 tbsp. lemon juice
Milk (sufficient to bind ingredients)

Drain salmon. Remove skin and bones; then flake. Add remaining ingredients and toss lightly. Turn into greased 7 1/2 x 3 1/2 x 3 inch loaf pan, smoothing top. Place this pan in another having about an inch of hot water and bake at 375 degrees for 45 minutes or until firm to touch in the center.

DIETITIAN'S NOTE:

To reduce saturated fat, fat, and cholesterol use a butter of which the first ingredient is liquid oil and skim milk. To reduce sodium, try Papa Dash.
