OATMEAL SPICE CAKE 
1 c. quick oats
1/2 c. butter, cut
1 1/2 c. boiling water
1 1/2 c. sifted flour
1 c. sugar
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. allspice
1/2 tsp. nutmeg
1/2 tsp. salt
2 eggs
1 c. brown sugar, packed

Combine oats, butter and boiling water in bowl. Cool. Sift together flour, sugar, soda, spices and salt. Add eggs to oat mixture. Beat well. Add dry ingredients and brown sugar to oat mixture; beat at medium speed for 2 minutes. Pour into greased 9 x 13 inch pan. Bake for 30 to 35 minutes at 350 degrees. Serves 16.
