GRANDMA'S HOMEMADE NOODLES | |
4 eggs, whipped 1 tbsp. milk 1/2 c. flour or enough flour to make stiff dough 1 1/2 tsp. salt or to taste Whip eggs just until the yolks are broken and well mixed. Add salt, milk and flour a little at a time. Beat with hand beater until it becomes difficult and knead with hands until the dough is just a little sticky. Roll out noodles on floured board until thin. Cover with wax paper or towel and let dry for whatever time you have or noodles can be used immediately. Sprinkle flour on noodles and cut in strips, stack strips and cut them in the size you prefer the noodles to be. Drop (while stirring) into hot broth and cook without cover for 20 minutes. Just like grandma used to make. Delicous, nourishing and filling. Just right for a cold winter night. |
