BANANA CAKE 
1/2 c. shortening
1 egg
1 1/2 c. sifted cake flour
1/4 tsp. salt
1 tsp. vanilla
1 c. sugar
1 1/4 c. (approx. 3) bananas, mashed
2 tsp. baking powder
2 tbsp. milk

Cream shortening and sugar, add egg; mix well, then bananas. Sift together dry ingredients, add with milk and vanilla; mix well.

BANANA ICING:

1 tbsp. butter
4 c. confectioners' sugar
2/3 c. (approx. 2) mashed bananas

Cream butter, add bananas. Mix with confectioners' sugar until smooth. May need to add more sugar for proper stiffness.
