BROCCOLI RICE CASSEROLE 
This recipe is also designed to serve a large group of people, 25 people.

1 (14 oz.) pkg. Minute Rice, cook as directed & set aside
2 (10 oz.) pkgs. frozen chopped broccoli, cook as directed 7 set aside
1 c. chopped celery
1 c. chopped onions
3 cans cream of mushroom soup
1 c. milk
1 1/2 lbs. Velveeta cheese or Cheez Whiz (chop 1 lb. & put into mix, slice the remaining 1/2 lb. to be put on top)

Saute celery and onion until tender in 4 tablespoons butter.

Combine soup, milk, cheese in BIG bowl. Stir in rice, remaining ingredients as prepared above and put in a greased 9"x12" pan. Bake at 350 degrees for 45 minutes to 1 hour. Put cheese on top and melt. (Can be frozen, cooked in microwave and warmed anytime.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
