CHILI RELLENO CASSEROLE 
1 lb. ground beef
1/2 c. chopped onion
1/2 tsp. salt
1/4 tsp. pepper
3/4 of a 4 oz. can of chopped or whole green chilies - some like hot-some mild
1 1/2 c. shredded cheese
1/4 c. all-purpose flour
4-6 eggs, beaten
1 1/2 c. milk

Brown ground beef and onions, drain well. Sprinkle with salt and pepper. Put half of chilies in bottom of greased baking dish. Sprinkle with cheese and top with meat. Arrange rest of chilies over meat. Set aside. Combine flour, salt in bowl, combine with eggs and milk gradually. Beat until smooth, pour over chili mixture. Bake at 300 degrees for 45 minutes or until knife through center comes out clean. Let stand 5-10 minutes, cut into squares. Serve with salsa, chips, refried beans.
