BLUEBERRY PIE 
1 c. sugar
1/4 c. flour
1/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. lemon rind
4 c. fresh blueberries
1 tbsp. lemon juice
2 tbsp. butter
1 double crust

Mix all ingredients. Pour into unbaked crust. Top with crust and sprinkle with cinnamon and sugar. Bake at 425 degrees for 40 minutes.

Pies can be made when blueberries are in season and frozen prior to baking. I usually make 15-20 pies for the deep freeze each year. Seal well in plastic.
