RED BEANS AND RICE 
1 lb. hot sausage
1 lb. smoked sausage
1/2 lb. bacon
1 yellow onion
1 stalk celery
1 green pepper
7 cloves garlic (or to taste)
1/2 c. catsup
1 tsp. Worcestershire sauce
2 tsp. Tabasco (or to taste)
1 tsp. thyme
1 bay leaf
4 (16 oz.) cans red beans
Minute Rice
Green onions

1. Brown bacon, add onions, celery, green pepper and garlic until tender.

2. Make sausage into balls and brown.

3. Brown or warm smoked sausage.

4. Mix bacon mixture, sausage and smoked sausage together.

5. Add to this mixture 1/2 cup catsup, Worcestershire sauce, Tabasco, bay leaf and thyme.

6. Add beans; simmer until taste blends, 1 to 2 hours. Don't let it stick. Serve this mixture over cooked rice. Garnish with green onions. Cornbread is real good with this recipe.
