1 TO 3 ALARM RED BEANS AND RICE 
2 lbs. dried red beans
2 lbs. Thompsons or Smokey Hollow Hot smoked sausage
Cayenne pepper
2 shallots
1 clove garlic
Salt

Half fill a 10 quart pot with salted water (tablespoon or so), let beans soak overnight covered. Rinse and sort beans in the morning (drink your coffee while your doing it). Add four quarts of fresh water to beans and bring to a boil, simmer for about 4 hours or until tender. Remove two cups of beans when tender, have a beer, mash beans and return to pot to thicken.

Mince garlic and shallots, have another beer. Cut sausage into 1/4 inch round things, you might need some more beer as this is very dangerous work. Brown sausage and drain, brown shallots with last batch of sausage and let that all drain. Take a break, have another beer, give your pot of beans a beer as well, any beer someone has errantly left in your refrigerator will suffice for the beans. Add shallots, sausage and garlic to the simmering pot. Keep water level over beans. Add salt and cayenne pepper to your taste, more is definitely better. Let the whole mess cook for about another hour, sample with another beer. Serve over white rice, with beer.
