CRANBERRY BREAD 
2 c. fresh cranberries, cut in half
3/4 c. chopped pecan
2 c. sifted flour
2 tsp. baking soda
1 tsp. salt
1 c. sugar plus 2 tbsp. sugar
2 tbsp. melted butter, keep warm in liquid form
1 egg
1/3 c. orange juice
Grated rind of 1 orange
1/4 c. water

Combine cranberries and nuts, set aside. Sift dry ingredients together, set aside. Combine egg, orange juice, water and melted butter. Make a well in dry ingredients and add liquid ingredients all at once.

Mix enough to moisten all dry ingredients, add cranberries and nuts. Stir well enough to blend DO NOT OVERMIX. Bake 70 minutes in a 9 x 5 x 4 inch loaf pan well greased with oiled paper in bottom and bake at 350 degrees. Cool 10 minutes before removing from pan.
