HOT PEANUT SOUP 
3 tsp. peanut oil
1 lg. onion, chopped
1 lg. Jalapeno pepper, minced
1 c. unsalted roasted peanuts
1 1/2 tsp. cumin
1/2 tsp. ginger
1/2 tsp. coriander
1/8 tsp. pepper
4 c. chicken broth
2 stalks celery, chopped
3 cloves garlic, minced

1. In a 2 quart saucepan - heat oil, add celery, onion, garlic, pepper and saute until tender.

2. Stir in remaining ingredients and bring to a boil. Cover and simmer for 20 minutes.

3. Remove from stove and strain. Puree solids in blender adding some liquid if necessary. Stir puree into liquid until blended.
