METROPOLITAN SPECIAL 
2 lbs. round steak
2 c. sliced onions
4 tbsp. butter or lard
2 c. water
2 c. sour cream
Flour for dredging
Salt
Pepper

Pound round steak and dredge in flour. Simmer 2 cups sliced onions in 4 tablespoons butter until slightly browned. Remove onions and in same grease brown steak. Sprinkle with flour and salt and pepper. Add onions, 2 cups water and one cup sour cream. Cook slowly for 1 to 1 1/2 hours.
