BROCCOLI CASSEROLE 
3 (10 oz.) frozen chopped broccoli
1 (8 oz.) pkg. stuffing
1/2 c. butter, melted
1 c. hot water

SAUCE:

3 tbsp. butter
1 med. onion, chopped
1/4 c. flour
1/4 tsp. pepper
1/4 tsp. salt
3/4 to 1 lb. cubed Velveeta

Preheat oven to 350 degrees. Cook and drain broccoli. Mix stuffing with butter and water.

TO PREPARE SAUCE: Melt butter in pan, saute onion until golden. Stir in flour, cook 1 minute. Add milk gradually, stirring vigorously. Season with salt and pepper. Cook until sauce boils, stir constantly. Add cubes of cheese, stir constantly. Add cubes of cheese, stir until cheese melts. If too thick, add 1/4 cup milk. Grease 2 1/2 quart casserole. Arrange layer of broccoli-layer of stuffing-pour on 1/3 sauce. Repeat 2 more times. Save some stuffing for topping. Bake for 30 minutes.
