CHICKEN CASSEROLE A LA HARRIETT MINOR | |
1 med. sized chicken 1 (8 oz.) sour cream 1 can cream of chicken soup 1 stack Ritz crackers, about 35 1 stick melted butter Poppy seeds Salt & pepper Cook chicken in boiling water with seasonings (celery, carrot, onion, salt and pepper). Debone chicken and mix with sour cream, soup, salt and pepper to taste. (Save broth for another recipe.) Crush crackers and mix with butter. Place chicken mixture in 1 or 2 quart casserole. Sprinkle with cracker mixture and poppy seed. Bake at 350 degrees until brown and bubbly. Eat mightily! |
