CHICKEN CASSEROLE 
1 (3 lb.) chicken, cooked, boned and diced (about 5 c. meat)
2 c. diced celery
1/2 c. chopped onion
1/2 c. chopped green pepper
1 c. mayonnaise
2 or 3 hard-boiled eggs, chopped
1 can chicken a la king OR
1 (10 1/2 oz.) can cream of chicken soup
1 c. chopped nuts
Salt and pepper to season
3 c. crushed potato chips
1 1/2 c. grated American cheese

Combine all ingredients except potato chips and cheese and place in a greased 9 x 13 inch pan. Top with chips blended with grated cheese. Bake at 350 degrees for 45 minutes.

VARIATION: Use 2 cans cream of mushroom soup instead of the chicken soup and add 1/2 pound cubed Velveeta cheese and 8 ounces cooked macaroni. Top with 1 cup crushed corn flakes and 1/2 cup slivered almonds blended with 2 tablespoons butter.
