ZUCCHINI BOATS 
8 med. sized zucchini, about 8 inch
1 c. sour cream
1/2 c. grated Parmesan cheese
1/4 tsp. salt
1 c. grated cheddar cheese

Parboil zucchini, whole, in boiling water about 5 minutes. Drain. Cut in half lengthwise. Using a small spoon, gently hollow each half, reserving pulp, making a small "boat".

Chop zucchini pulp and mix with sour cream and Parmesan cheese. Stir in salt. Fill zucchini boats with this mixture and arrange side by side in shallow baking dish.

Sprinkle grated cheddar cheese over filled zucchini. Broil about 4 inch from heating element, about 3 to 5 minutes or until cheese melts and top is golden. Makes 8 servings.
