MUSHROOM STUFFED MEATLOAF 
2 c. sliced fresh mushrooms
1 c. onion, chopped
2 tbsp. butter
1/2 c. sour cream
2 eggs
1/2 c. milk
1 1/2 lb. ground beef
3/4 c. bread crumbs
2 tsp. salt
1 tbsp. Worcestershire sauce

Saute 1 cup mushrooms and onion in butter. Remove from heat and stir in sour cream. Set aside.

Combine remaining ingredients except reserved mushrooms. Put half the mixture into 9x5 inch loaf pan; make shallow trough down center. Spoon sour cream, mushroom mixture into indentation. Shape rest of meat over filling. Seal edges. Bake 1 hour in 350 degree oven. Let stand 15 minutes before slicing. Garnish with remaining mushrooms.

SOUR CREAM SAUCE:

1 c. sour cream
1 tsp. horseradish
Dash of pepper
1 tsp. Dijon mustard
1/4 tsp. salt
Dash of nutmeg

Combine above ingredients. Heat in saucepan over low heat. Serve hot with meatloaf.

I just made this for my husband and I. We were not very impressed. The meatloaf (including sauce) seemed to be very bland. I will not be making this dish again.

My husband's response was "Darn that was good" and he said he couldn't stop eating it. I liked it, and the kids--3 & 5,gobbled it up. I took the mushrooms and onions out of theirs before giving it to them, and no sauce. The sauce is quite tangy and interesting.

I made this meatloaf yesterday and it was very tasty! I left out the milk and used prepared mustard in place of the horseradish. I also used 1 lb of extra lean ground sirloin and 1/2 lb of ground turkey. Saute the remaining mushrooms in butter for garnish.
