CAULIFLOWER CHEESE PUFF 
1 lg. cauliflower, broken into flowerettes
4 eggs, separated (beat egg yolks)
1 tbsp. sugar
Wedge of Cheddar, shredded
1 1/2 c. milk
3 tbsp. butter
1/4 c. flour
1 tsp. salt
White pepper

Blanch cauliflower until tender. Place in shallow rectangular casserole. Make thick white sauce with milk, butter and flour. Add cheese, spices and sugar to white sauce. When cheese is fully melted. Add beaten egg yolk. Whip egg whites until stiff. Fold into cheese sauce. Pour over cauliflower. Bake at 350 degrees for 30-35 minutes.
