CHOCOLATE RUM TRUFFLES 
2 c. milk chocolate chips
1/2 c. butter, softened
3 egg yolks
2 tbsp. rum or brandy (rum flavoring to taste can be substituted)
Confectioners' sugar

Melt over hot (not boiling) water, the milk chocolate chips. Remove from heat but keep chocolate over hot water. Add butter and egg yolks; beat with wire whisk or fork until smooth. Transfer mixture to small bowl.

Add rum or brandy; stir until smooth. Set bowl over ice bath, stirring constantly 20-30 minutes, until fudge-like in consistency (yet smooth and creamy). Shape into 1 inch balls, then roll in confectioners' sugar. Chill until firm. Store in refrigerator.
