MINIATURE CHEESECAKES 
24 cupcake papers
24 vanilla wafers
2 (8 oz.) pkgs. cream cheese, softened
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
1 can pie filling
1/2 c. nuts, sliced or halved

Put papers into cupcake pans, place 1 vanilla wafer in bottom of each paper. In small bowl, beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Fill the papers 3/4 full with cheese mixture. Bake in preheated 375 degree oven 15 to 20 minutes or until set. Top each with spoonful of filling and nuts. Chill.
