MANDARIN ORANGE CAKE 
1 box yellow cake mix
4 eggs
3/4 c. cooking oil
1 can mandarin oranges
1 can crushed pineapple

Mix cake mix as for any cake, then add eggs, oil, and mandarin oranges. Pour into three 9 inch cake pans and bake as directed on box. Remove from oven; prick layers with a fork and pour pineapple juice (reserve pineapple for icing) over the hot layers. When cool, frost with the following icing.

ICING:

1 lg. carton Cool Whip
1 sm. box instant vanilla pudding

Mix above together and add crushed pineapple. Spread over layers and on top and sides of cake. Keep refrigerate.

NOTE: A can of mandarin oranges may be included in the icing if desired.
