CREAMY CUCUMBER SALAD | |
1/2 c. buttermilk 2 tbsp. plus 2 tsp. Weight Watcher's reduced calorie mayonnaise 1 tbsp. chopped fresh dill 1/8 tsp. salt 1/8 tsp. pepper 2 c. sliced pared cucumbers 1/4 c. diced red onion 4 lettuce leaves In a small mixing bowl, combine buttermilk, mayonnaise, dill, salt and pepper, stirring until smooth; add cucumber and onion and stir to coat. Line serving bowl with lettuce leaves and top with cucumber mixture; Chill and serve. Makes 4 servings. Each serving provides: 1 1/4 vegetable, 1 fat, 15 calories. |
