DUTCH CRUST OATMEAL FRUIT
MUFFINS
 
Dutch Crust (recipe follows)
3/4 c. flour
3/4 c. whole wheat flour
1/2 c. rolled oats
1/2 c. packed brown sugar
2 tsp. baking powder
1 tsp. baking soda
1 c. fresh or partially frozen fruit
2 eggs
1/2 c. buttermilk
1/2 c. melted butter

Prepare Dutch crust; set aside. In large bowl, combine flours, oats, sugar, powder and soda. Add fruit, toss to coat.

In a small bowl, beat eggs, add buttermilk and butter. Add to flour mixture and stir just until blended.

Fill greased muffin cups 2/3 full and sprinkle on Dutch crust. Bake in a 400 degree oven 15-25 minutes or until toothpick inserted in center comes out clean.

DUTCH CRUST:

1/4 c. soft butter
1/4 c. packed brown sugar
1/4 c. rolled oats
1/4 c. flour
1 tsp. cinnamon

Mix together until crumbly.
