UNCLE JIM'S CINNAMON RAISIN
BREAD PUDDING
 
1 (16 oz.) loaf cinnamon raisin bread
1 qt. milk
3 eggs
2 c. sugar
2 tbsp. vanilla extract
1 tbsp. butter

Grease a 9x13 glass baking dish. Preheat oven to 350 degrees. Tear bread into 2 inch pieces. Place in a large bowl and pour in the milk. Toss gently until bread is coated. Put aside for 15 minutes.

In a small bowl beat eggs and sugar until it's light, thick, and smooth. Add vanilla. Pour egg and sugar mixture over milk-soaked bread. Mix gently and thoroughly until bread is evenly coated.

Place in baking dish. Set dish in a hot water bath (a pan with 1 or 2 inches or hot water). Bake, uncovered, for 50-60 minutes or until a knife that is inserted near the middle comes out clean. Serve warm with fresh whipped cream.
